It’s an annual mid-May scene in the Mercy Medical Center cafeteria – food service colleagues mixing more than 500 gallons of pancake batter for the Spirit of Springfield and the World’s Largest Pancake Breakfast. For many years, the Mercy Print Services has also printed tickets for the event, as well as flyers that are distributed to local schools.
The World’s Largest Pancake Breakfast has been a staple in the greater Springfield community since 1986 and typically draws more than 10-thousand people. In addition to pancakes, attendees also enjoy bacon, coffee, milk, and juice.
