It’s an annual mid-May scene in the Mercy Medical Center cafeteria – food service colleagues mixing more than 500 gallons of pancake batter for the Spirit of Springfield and the World’s Largest Pancake Breakfast.

The World’s Largest Pancake Breakfast has been a staple in the greater Springfield community since 1986 and typically draws more than 10-thousand people. In addition to pancakes, attendees also enjoy bacon, coffee, milk, and juice.
The annual Big Pancake Breakfast is a big part of what makes downtown Springfield so special.
